Iowa State outlasted Kansas State 24-21 on Saturday night, kicking off the College Football season. If you’re heading to your team’s game, here’s a tailgate recipe that just might score points with your crew.
Season Ticket Picnic ‘Wiches
INGREDIENTS (Makes 6)
½ C. mayonnaise
½ C. sour cream
¼ C. prepared horseradish
¼ to ½ tsp. lemon zest
Coarse salt and black pepper
Hot sauce to taste
6 hoagie or steak rolls
3 or 4 tomatoes, sliced
1½ lbs. sliced deli roast beef
Lettuce
1 red onion, thinly sliced
DIRECTIONS
Mix the mayonnaise, sour cream, horseradish, lemon zest, and 1¼ teaspoons salt. Season generously with black pepper and hot sauce. Cover and chill at least 30 minutes.
When you’re ready to eat, spread the chilled horseradish sauce over the bottom half of the rolls (or serve it alongside the sandwiches instead). Add some tomato slices and season with salt and pepper. Top with roast beef, lettuce, and onion. Cut in half for serving.

Whether you’re headed to the football stadium, the ballpark, or your favorite state park, these make-ahead sandwiches are ready to roll. They’ll stay fresh for hours, so you can cheer, snack, and repeat without worrying about soggy bread or sad fillings. With a zesty, creamy sauce and a little deli magic, they’re your winning ticket to flavor—and they look pretty impressive too.
